Southside's Original Sausage Recipe: A Spicy Tribute to the Past
Old-timers fondly remember Southside's original sausage recipe as being spicier, with a more pronounced kick of cayenne and cracked black pepper. In homage to that fiery legacy and our own rich history, we've resurrected the hotter recipe and named it after the year of Southside's birth – 1882.
This is a premium, all-beef sausage that is coarsely ground and encased in a natural pork casing. It is made fresh by us, in-house, daily – just as we have done for over 140 years. Introducing the famous Elgin Hot Guts Sausage!
With each order, you'll receive 6 packages, each containing 4 links, for a total of 24 sausages. Our smoked sausages are designed to last up to 1 year in your freezer and should be consumed within 30 days of defrosting. This package will provide ample servings for 10-12 people.
All of our meats are fully cooked and vacuum-sealed to lock in peak flavor and moisture. While each box is carefully packed with ice packs and swiftly shipped, it is normal for the meat and ice to partially or fully thaw during transit.
To enjoy the full flavor of our 1882 Hot Beef Sausage, simply heat it to an internal temperature of 165°F. When the natural juices of the sausage start to break through the casing, you'll know it's ready to savor.
Our sausage is made fresh by us, in-house, daily in Elgin, ensuring a level of quality, taste, and enjoyment that is unmatched. This tradition of smoking meats and delighting Texans dates back to 1882, when Southside Market was founded by William Moon.
Moon began raising and slaughtering animals on FM 1704 in Elgin, and as was common before refrigeration, he had to sell the meat fresh or risk spoilage. This led him to start smoking and barbecuing his meats, laying the foundation for Southside's enduring legacy.
The current owners of Southside Market & Barbeque, Bryan & Rachel Bracewell, are the third generation of Bracewells to helm this iconic establishment. When native Texans Ernest and Adrene Bracewell purchased Southside Market & BBQ in 1968, Mr. Bracewell even began delivering Southside's homemade Elgin Hot Sausage to local grocers, including the then-small H.E. Butt Grocery Co., helping to cement the Elgin Hot Gut legend.
