Southside Market's sausages are crafted using only the finest ingredients and smoked over Texas post oak wood, infusing them with a rich, smoky aroma and flavor. These fully-smoked sausages should be heated to an internal temperature of 165°F, at which point the natural juices will break through the casing, signaling that they are ready to be enjoyed.

The story of Southside Market & Barbeque dates back to 1882, when William Moon began raising and slaughtering animals on FM 1704 in Elgin. In the pre-refrigeration era, Moon had to quickly sell his fresh meats or risk spoilage. This led him to start smoking and barbecuing his products, laying the foundation for the company's legacy.

In 1968, native Texans Ernest and Adrene Bracewell acquired Southside Market & BBQ, and the business has remained in the Bracewell family ever since. The current owners, Bryan and Rachel Bracewell, proudly continue the tradition of delivering premium, authentic Central Texas smoked barbecue and sausages to customers across the region.
